    10 Minute Easy Carne Asada Quesadilla

    This carne asada quesadilla recipe is a quick and easy way to use leftover steak or to make it from scratch at home! The delicious Mexican flavors make a filling and nutritious meal in less than 10 minutes! No marinating time!

    Taco night happens all the time in my house! If I'm not craving chicken burrito bowls then it's a delicious carne asada quesadilla like this one!

    Full of flavor and simple ingredients, this recipe is super filling and flavorful. You can use leftover ribeye steak or make it the easy way - in your Instant Pot!

    If you love quesadillas as much as we do you have to try this Italian version, chicken taco recipe, and simple cheese version!

    What Makes This Recipe Work

    • Super easy to make for a quick weeknight dinner.
    • This a great recipe for using up leftover steak. Just add in some extra salsa and Mexican seasoning!
    • Use taco-sized tortillas to make an appetizer-sized version or burrito-sized tortillas to make a full meal!
    • No grill is necessary for this carne asada quesadilla- you can make this using my Instant Pot steak recipe.

    • Carne Asada: I used my Instant Pot Carne Asada recipe for this quesadilla. You can also use this recipe to it on the stovetop if you don't have an Instant Pot.

    How to Make This Recipe

    Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.

    1. Heat a griddle or skillet over medium heat. For each tortilla add 1 serving of cooked meat to one side of the tortilla and cover with ⅛ cup cheese.
    2. Add the remaining ⅛ cup cheese to the other side of the tortilla and fold the cheese-only side over the steak side.
    3. Allow the quesadilla to cook for 2-3 minutes or until nicely browned on the bottom.
    4. Flip and cook another 2-3 minutes or until the cheese is melted and the tortilla is golden brown.

    Expert Tips

    • Reheat: Reheat meat in the microwave or on the stovetop.
    • Storage: Leftovers should be stored separately as storing them together may cause the tortillas to become soggy. Store leftovers in an airtight container for up to 3 days in the refrigerator.
    • Make ahead: To make this recipe ahead, you can cook the meat and store it in the refrigerator for up to 3 days prior to making the carne asada quesadilla. Reheat in the microwave or on the stovetop prior to making the quesadilla.

    Cilantro lime rice, Mexican Street corn salad, or black beans would be excellent side dishes. Top it with some pico de gallo, sour cream or Greek yogurt, or some guacamole.

    Easy & Quick Carne Asada Quesadilla

    10 minute carne asada quesadilla is a quick and easy way to use leftover steak or carne asada. Full of Mexcian flavors, filling, and nutritious with no marinating time!

    Ingredients

    • 4 servings carne asada use leftover steak or our carne asada recipe
    • 4 burrito-sized flour tortillas
    • 1 cup shredded Mexican blend cheese
    • ½ cup salsa
    • lime for serving
    • cilantro for serving

    Instructions

    • Heat a griddle or skillet over medium heat. For each tortilla add 1 serving cooked carne asada to one side of the tortilla and cover with ⅛ cup cheese. Add remaining ⅛ cup cheese to the other side of the tortilla and fold cheese-only side over steak side.
      4 servings carne asada, 4 burrito-sized flour tortillas, 1 cup shredded Mexican blend cheese
    • Allow quesadilla to cook for 2-3 minutes or until nicely browned on the bottom. Flip and cook another 2-3 minutes or until cheese is melted and tortilla is golden brown.
    • Serve with salsa and a squeeze of lime. Sprinkle with cilantro if desired.
