    Paleo crock pot chicken thighs slow cooked with honey and garlic are deliciously tender!  This easy paleo slow cooker recipe is family friendly and better than take out!

    Boneless chicken thighs are completely underrated in my opinion.  I don't know where I started to favor chicken breast, but I know that I wasn't giving that cut of chicken enough credit!

    What Makes This Recipe Work

    • Perfect texture: these paleo crockpot boneless chicken thighs are so tender and fall apart with ease - just like pulled chicken! Sweet and savory flavor!
    • Paleo & Whole30: healthy slow cooker recipe when you are following one of these specific dietary restrictions.
    • Customizable: You can use chicken breasts or drumsticks if you have them on hand. You can also mix in whatever veggies you like - broccoli is one of my favorites. If you aren't worried about this recipe staying paleo, you can also swap out coconut aminos for soy sauce.
    • Healthy & wholesome: these paleo crock pot chicken thighs are made in one pot with a simple paleo honey garlic sauce and slow cooked to perfection.
    • Easy one-pot meal! You do not have to sear these and can just throw them in the pot and drench them with the paleo honey garlic sauce.
    • Better than takeout! Serve over cauliflower rice for a paleo dinner or use a quick microwave rice like 90 second grains from Aldi.

    Here are the ingredients you need to make this recipe. Reference the recipe card at the bottom for exact measurements and the notes below for substitution ideas.

    • Boneless Chicken Thighs: this recipe calls for boneless, but you could also use bone in if that is what you have. You will want to adjust cooking time accordingly and make sure the meat cooks to 165F and pulls apart from the bone easily.
    • Coconut Aminos: may be substituted for soy sauce if you aren't making the paleo version.
    • Ketchup: I used Primal Kitchen ketchup as it is paleo, however you can use Heinz or whatever ketchup you like if you aren't making the honey garlic chicken thighs paleo.

    How to Make This Recipe

    Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.

    Stir together the honey garlic sauce marinade ingredients and set aside.

    After you make the marinade, add chicken thighs to the crockpot and slow cook for 2-3 hours on high, or 4-6 on low.

    Expert Tips

    • Storage: store leftovers in an airtight container in the refrigerator for up to 3 days.
    • Freezer: freeze cooked and cooled leftovers in a freezer safe container for up to 3 months.

    How should I serve this?

    Cauliflower rice is a great choice if you want to keep this recipe paleo friendly or grain free!  You can also serve it as a stir fry with veggies over brown rice or with a side of potatoes.

    Add in Sriracha, Thai chili paste or drizzle with some Thai chili oil for a spicy version. Mix in some sesame seeds, stir fry veggies, a squeeze of lemon, fresh or dried ginger, chopped cashews or peanuts, scallions or cilantro.

    Can you stack chicken thighs in the crock pot?

    I don't recommend stacking them in the crock pot so you can ensure even cooking. Place them in one layer to ensure each piece is properly cooked.

    Can you just put raw chicken in the slow cooker?

    Yes! That is what makes this recipe so easy and simple. It's a one pan recipe that you add all of the ingredients to and set it and forget it.

    Paleo Crock Pot Chicken Thighs

    Paleo crockpot chicken thighs slow cooked with honey and garlic are deliciously tender!  This easy paleo slow cooker recipe is family friendly and better than take out!

    Ingredients

    • 1 pound boneless chicken thighs
    • salt + pepper to taste

    Sauce Ingredients

    • 2 teaspoon minced garlic
    • ½ cup Primal Kitchen ketchup
    • ⅓ cup coconut aminos
    • ¼ cup raw honey
    • 1 teaspoon oregano

    Instructions

    • Mix together sauce ingredients until smooth. Season chicken with salt and pepper and place chicken thighs into slow cooker. Pour sauce over the chicken.
    • Cook on high for 2-3 hours or low for 4-6 hours. Shred chicken and mix in cooked broccoli. Serve over cauliflower rice.

      Just curious how much broccoli you generally cook and stir in? And, have you ever doubled the recipe in the crockpot? Thoughts on that?

        I definitely think you could double this recipe in the crockpot! I usually just cut up one head of broccoli into florets.
