    Pellet Grill Corn on the Cob with Chili Lime Butter is a delicious and easy summer side dish you can make on the Traeger grill, Pit Boss, or gas grill. This recipe is for juicy and flavorful fresh ears of corn. Topped with rich yet light chili lime butter, this pellet grilled corn recipe is perfect for summer BBQs, parties, and cookouts.

    Fresh summer corn in the husk works best for this recipe. I have not tried it using frozen corn.

    Butter creates a rich, buttery topping that pairs well with corn.

    Chili lime seasoning provides a tiny bit of heat and spice and a citrus flavor from the lime. I use a store-bought spice from Trader Joe's.

    Salt can be added to increase flavor.

    Taste and Texture

    Pellet grill corn has a slightly sweet taste. The texture of cooked corn kernels is tender and juicy with a bit of bite.

    The chili lime butter enhances the flavor of the corn while providing a buttery topping with a little bit of heat and tang without being spicy.

    How to Make

    Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.

    Step 1

    Heat Traeger or Pit Boss pellet grill on high for 15 minutes.

    Step 2

    Prepare the corn by gently pulling down the husks and removing the silks.

    Since the husks are raw, some will fall off. That is OK.

    Rinse the corn with water and then carefully pull the husks back up to cover the corn. Wet the outside of the husks.

    Once the grill is heated to 400F, place the prepared corn on the cob directly on the grill grates and close the lid.

    Rotate the corn every 5 minutes a quarter turn for 15-20 minutes or until the desired doneness.

    Carefully remove the pellet grill corn on the cob to a platter and pull back the husks.

    Season with butter and salt, or proceed below to make with chili lime butter.

    How Long does it Take Corn on the Cob to Cook in the Husk on the Pellet Grill?

    At 400F, it takes about 15-20 minutes to cook corn on the cob on the pellet grill. If grilling corn in the husk at 350F, it will take longer.

    How to Make Chili Lime Butter for Grilled Corn

    While the corn is grilling, combine the softened butter with the chili lime seasoning. Set aside until ready to use.

    Expert Tips

    • Use a grilling heat glove or grilling tongs when operating the pellet grill.
    • When rotating the corn, do it quickly yet carefully to avoid heat loss from the pellet grill.
    • For more grill marks on the corn, rotate only once, halfway through.
    • Leave the husks on the corn to retain moisture.
    • Soak the husks for 30 minutes for even more moisture in the corn.
    • If the corn is getting too charred for your liking, move it to the top rack for less direct heat.

    How to Serve and Store

    Once the corn is cooked, remove from the grill to a plate. Evenly spread the chili lime butter over the top of the hot corn.

    Top with additional toppings like cojita or feta cheese and cilantro or chives for a Mexican street corn taste.

    Serve with summer recipes like barbecue chicken, air fryer ribeye steak, grilled pork tenderloin, or turkey burgers.

    Cut the kernels from the husks and stir the grilled corn into Santa Fe Chicken, Crock Pot Chicken Tortilla Soup, Chicken Burrito Bowls, or Walking Taco Casserole Bake.

    Equipment Needed

    Heat glove - Use for safe grilling to help prevent burns.

    Pellet Grill - I use a Traeger grill.

    Grill tongs - Helpful for turning the pellet grill corn safely.

    Platter - Great for preparing or serving.

    Chili Lime Seasoning - Use a spice similar to this to make the chili lime butter.

    Corn in the husk does not need to be soaked before grilling. You may opt to soak fresh corn for more moisture.

    To avoid burning or grill fires, remove the silks and any loose or dried out husks. Also, rinse the husks under water before grilling.

    Yes. Grill corn on the cob directly on the grill grates. You do not need foil or husks.

    Ingredients

    • 6 ears fresh corn
    • 4 tablespoon butter
    • 1 tablespoon chili lime seasoning
    • salt to taste

    Instructions

    • Heat the pellet grill on high for 15 minutes.
    • Prepare the corn by carefully pulling down the husks and removing the silks. Rinse corn cobs and then carefully pull the husks back up.
      6 ears fresh corn
    • Optional: Soak husks in water for 30 minutes. Alternatively, generously rinse the outside of the husks under water.
    • Place the corn directly on the grill grates. Rotate the corn a quarter turn every 5 minutes for 15-20 minutes or until the desired doneness.
    • Combine softened butter and chili lime seasoning and set aside.
      4 tablespoon butter, 1 tablespoon chili lime seasoning
    • Carefully remove the pellet grill corn to a platter and pull back the husks.
    • Evenly spread chili lime butter over the top of the corn. Salt to taste. Top with additional toppings as desired and serve.

    Notes

      • When operating a pellet grill, use grilling tongs or a heat glove to avoid burns.
      • Carefully yet quickly rotate the ears of corn to avoid heat loss.
      • If you prefer more char or grill marks on the corn, rotate halfway once during grilling.
      • For less char or grill marks, move the pellet grill corn to the top rack for less direct heat.
      • Soak the husks in water for 30 minutes if desired.
