    Crispy and delicious garlic parmesan brussel sprouts are roasted to perfection on a sheet pan with only 5 simple ingredients. Melty, cheesy and the best low carb side dish for Thanksgiving or any night of the week.

    This may be one of those side dishes that takes a second look from the first time you tried them. I know I was not a fan of the soggy and mushy way I tried these the first time!

    Enter this recipe and goodbye to boiling and steaming! This simple cheesy recipe produces the most deliciously crispy sprouts that are absolutely addictive!

    Once you give this recipe a try, you'll be obsessed! You will definitely want to try my air fryer brussel sprouts or honey sriracha brussel sprouts recipes - they're both amazing!

    What Makes This Recipe Work

    • Super quick to make: no need to pre-steam or pre-boil.
    • Simple recipe. with very few ingredients.
    • Customizable: make it spicy with red pepper flakes , add some zest with lemon or balsamic vinegar, add in extra crisp with Panko breadcrumbs or flavor with bacon.
    • Low carb, gluten free and wholesome!

    • Brussels sprouts: trimmed, cleaned and cut in half or shredded into fourths.
    • Garlic cloves: highly recommend roasted garlic. Minced or smashed garlic also works well. You can also use garlic powder if you have it.
    • Olive Oil: can also use butter or coconut oil.

    How to Make this Recipe

    Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.

    In a large bowl combine the sprouts, roasted garlic and salt & pepper.  Season with salt and pepper.

    Place the sheet pan into a 400F oven for 15 minutes.  Stir and return sheet pan to the oven for an additional 15 minutes.

    Top sprouts with cheese and broil for 5 minutes to crisp them even more. You can serve them immediately or at room temperature.

    Expert Tips

    • For crispier brussels sprouts slice them into fourths rather than half.
    • Add in some cooked bacon, a squeeze of lemon or a drizzle of honey for an extra level of flavor and texture.
    • Feel free to add more Parmesan. If you are looking for a super cheesy recipe, definitely use more than the recipe calls for.
    • Larger sprouts may take more time in the oven and smaller ones may roast up faster.
    • To get perfectly browned garlic parmesan brussel sprouts make sure they are turned cut-side down for the first roasting.
    • For extra crisp add 2 tablespoon Panko breadcrumbs to Parmesan cheese prior to broiling.
    • Cut down on prep time by using pre-sliced and pre-washed sprouts.
    • Spread brussels sprouts in a single layer and be sure to use enough oil to ensure even cooking and crispness.
    • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
    • Reheating: Reheat leftovers under the broiler or in the air fryer until heated through. If you choose to microwave them they will not be crispy.
    • Make Ahead: You can follow the prep steps and store the ingredients in the fridge in an airtight container until you are ready to roast them.

    FAQs

    Why won't they get crispy?

    Thinner cuts will allow the sprouts to get more crispy. You will also want to make sure that you use enough oil when roasting them.
    Also, cooking them in one layer on the sheet pan with space between each to help ensure that all of them get equal heat.

    What goes well with this recipe?

    This recipe is a perfect side for Thanksgiving dinner, the perfect complement to turkey. They are also delicious as a weeknight side dish for salmon, meatloaf, or chicken - pretty much anything!

    Can I use frozen sprouts?

    I do not recommend using frozen if you can get fresh. Frozen tends to lose crispiness and that is one of the best things about this recipe.

    • 1 baking sheet

    Ingredients

    • 2 pounds brussel sprouts trimmed and halved
    • 2 TB olive oil more if needed
    • 1 teaspoon sea salt plus more to taste
    • 1 teaspoon pepper plus more to taste
    • 6 cloves roasted garlic
    • ½ cup Parmesan cheese

    Instructions

    • Preheat oven to 400 degrees.
    • Drizzle trimmed & halved brussel sprouts with olive oil.  Stir in garlic.
    • Salt & pepper to taste and add to a baking sheet.
    • Roast for 15 minutes.  Flip brussel sprouts .  Roast for an additional 10-15 minutes or until desired doneness. Add cheese and use broiler function for last 5 minutes.
