High starch content Russet potatoes and Idaho potatoes are the best potatoes for making a no foil baked potato. However, this no-foil baked potato can be made using any of your favorite varieties including sweet potatoes or Yukon Golds.

Olive oil helps to produce an outside crispy skin. Avocado oil or coconut oil (refined) can also be used.

Coarse sea salt, kosher salt, or Himalayan sea salt is the perfect seasoning for the outside skin. Add in other herbs or seasonings like garlic powder, onion powder, or black pepper if desired.

How to Bake Potatoes Without Foil

Below are step-by-step instructions for how to cook this recipe. The recipe card at the bottom shows the exact cooking time and temperatures.

Step 1 - How to Clean Potatoes Before Baking

cleaned potatoes next to a vegetable brush.

Preheat the oven temperature to 400F. Wash the outside skin thoroughly with water and a vegetable scrub brush and dry the outside with a paper towel.

Step 2 - Why Do You Poke Holes in Potatoes Before Baking?

raw russet potatoes next to a fork.

Use a fork to prick holes in the skin all around. This helps to make small air holes to allow steam and air to escape during baking.

    Step 3

hand drizzling olive oil over potato skin.

Drizzle a little olive oil over the skin and season with salt. Rub the salty oil all over the skin and the outside of the potato.

    Step 4

baked potatoes in the oven on the rack.

Place potatoes directly on the oven rack. Place a rimmed baking sheet or sheet pan directly under the oven rack holding the potatoes to capture any drippings.

You may line the baking sheet with parchment paper if desired to help with cleanup.

Step 5 - How Long to Bake a Potato at 400

three baked potatoes on white parchment paper.

Bake potatoes at 400F for 50-110 minutes, depending on the size. Potatoes are cooked when a fork easily pierces the skin.

What Temperature Should A Potato Be Cooked To?

The internal temperature of a cooked potato is between 205 degrees f and 212 degrees f. A good baked potato will land in between that range and yield a fluffy interior.

Use oven mitts to carefully remove the potatoes from the oven before placing them on a plate.

Allow potatoes to cool for at least 5 minutes before cutting open with a sharp knife and adding toppings for a perfectly baked potato.

What Should I Serve with Oven-Baked Potatoes?

    • Serve as a main dish for an easy weeknight dinner with loaded baked potato bar favorite toppings like a pat of butter, bacon bits, cheddar cheese, green onions, a dollop of sour cream or Greek yogurt, chives, bean chili, and salsa.
    • Accompany seafood dinners like air fryer mahi mahi, marinated Chilean sea bass, or sautéed shrimp.
    • Serve a no-foil baked potato as a great side dish alongside classic steakhouse fares like juicy ribeye steak and crispy asparagus.
    • Accompany oven-baked chicken breast or crispy panko chicken with a delicious baked potato.

Expert Tips for Making the Perfect Baked Potato

    • Select fresh potatoes without a green hue or sprouts.
    • This recipe also works for baking sweet potatoes without foil. You can interchange the type of potato you prefer.
    • Be sure to use a fork to poke holes in the potatoes. This will help steam to escape from the potato and reduce the chances of a mess in the oven.
    • Store leftovers in an airtight container for up to 3 days in the refrigerator.
    • Reheat in the oven at 350F until heated through.

    Recipe FAQs

Do baked potatoes need to be wrapped in foil?

No. You can make a baked potato without foil by placing it directly on the oven rack. This no foil method provides a deliciously crispy outside skin that makes eating the potato skin even that much more delicious.

Nothing happens if you don't wrap potatoes in foil. I've found they taste better when baking without foil.

Do baked potatoes cook faster with or without foil?

No foil baked potatoes cook a bit faster since there is no foil to heat up in the baking process.

How long does it take to bake potatoes at 400F?

Depending on the size of the potato, baking potatoes at 400F takes anywhere between 50 and 110 minutes.

The size of the potatoes used will impact the total cooking time. Large potatoes take longer while smaller potatoes will take less time.

What temperature should a baked potato be cooked at?

I like cooking no foil baked potatoes at 400F to maximize the outside crisp and this recipe takes less time than cooking baked potatoes at 350F.

You may wonder if it's better to cook a baked potato at 350F or 400F and it doesn't matter which you select, 350F just takes longer to bake.

Baking potatoes at 350F may result in a slightly more moist potato but the increased cooked time isn't worth it to me personally.
