    Sometimes the lunch rut hits you hard! I find lunch to be one of the harder meals to make fun!

    But fear not, I have rounded up a bunch of healthy rotisserie chicken recipes that are super easy to prep ahead and use your favorite precooked protein!

    These healthy rotisserie chicken recipes are tasty, quick to make and less expensive and time consuming that baking, roasting or grilling.

    What can I make with it?

    You can literally make tons of healthy rotisserie chicken recipes with this versatile protein.  Basically any recipe that calls for cooked meat can use rotisserie chicken in its place.

    I use it all of the time when I need a cooked protein quickly.  It is perfect for healthy meal prep bowls and quick dinners like casseroles and soups.

    Is it healthy? Who makes the healthiest kind?

    It can be healthy if you read the labels and understand how it is prepared.  Many rotisserie chickens are seasoned prior to shipping to the store for cooking.

    Be sure to read the label to understand what seasonings and other ingredients are added prior to cooking. I like to buy mine at Whole Foods or at our local Giant Eagle that sells them with no antibiotics.

    Is it OK to eat on the keto diet?

    It is a great choice for the low carb or keto diet.  Precooked chicken is a great way to prep healthy keto meals ahead of time.

    How many meals can you make from one?

    By using the chicken breast, leg, thigh and wing meat you can get usually over 2 cups of chicken from just one.  This means I could make roughly four salads or wraps.
